How Whould You Suggest Getting Back Into Running After Illness Where You Haven't Run For 1 Week
Would It Be Ok Just To Pick Up Where You Left Off

Common Sense would suggest easing back into it, it would depend a little on the type of illness too. If it were a chest infection or something that could be an issue with breathing / your lungs etc, then it should be eased into. Naturally if it was a heart related illness then caution should definetly used. Good luck and ease back for a few days, it cant hurt and could be a better long term option.
